This comforting, mild curry is a firm favourite with vegans and meat-eaters alike. Lightly spiced protein-rich red lentils are slowly cooked with sweet potatoes which, unlike white potatoes, don’t raise blood sugar level as quickly, keeping you fuller for longer. Packing a protein punch we have topped the dish off with organic spinach – rich in antioxidants, calcium and iron – stewed in fresh organic tomatoes, coconut milk, anti-inflammatory, turmeric and ginger. This dish really is a nutritious powerhouse.
