GREEN LENTIL, BEETROOT AND GOAT’S CHEESE GRATIN
A delicate gratin with coconut, lentils, beetroot and butternut squash.
Topped with a crunchy gluten-free buckwheat and warm goat’s cheese topping.
The lentils give the dish a density and protein punch whilst the earthiness of the beetroot – a great source of fibre, magnesium and potassium – and sharpness of the warm goat’s cheese compliment each other perfectly. Slow cooked in coconut milk, spices and organic butternut squash and beetroot, the dish is then placed in the oven to give the buckwheat topping a delicious crispness.
Serving suggestion: Enjoy with a crisp rocket and watercress salad.
