CARIBBEAN CURRIED CHICKPEAS WITH BROWN RICE AND SPINACH
One of our favourite dishes, this sweet and spicy vegan curry takes inspiration from our time living the Caribbean. The curried coconut chickpeas are a great source of plant-based protein, along with fibre and slow releasing carbohydrates – keeping you full for longer.
The dish is accompanied by zesty spinach, adding further iron and vitamins to the meal to help keep you strong and healthy, and nutritious brown rice, which is rich in fibre and selenium, which reduces the risk of developing common illnesses such as cancer, arthritis and heart disease.
We use organic ingredients wherever possible.
